Season’s Eatings Everyone!

‘Tis the season for Holiday Schweddy Balls! If you don’t get the reference, I’m sorry, go watch some holiday SNL from the 90’s and get back to me.

For this recipe, I used the trending and popular Fat Balls from Lee from America and added my own festive cheer to them. Typically, I make these balls without the chocolate drizzle and toppings and use them as a pre/post work-out snack, a midday pick-me-up, or a quick, running out the door breakfast. The recipe is really versatile; you can play with ingredients proportions based off of what you have at home and store them in the freezer for when you need them! Super easy and great snack to have on hand.

As we know, the holidays can be tough for a lot of people, for varying reasons, but it’s also difficult for those with food allergies/sensitivities. More often than not, there are few to zero dessert options at holiday gatherings for people who are gluten, nut free, etc.

So a little bit about my balls, I made a nut free version and the original for my gym’s holiday party, and I am so excited about them! Make them for your next holiday gathering, add other festive decorations to your heart desire or make them for your own damn self to enjoy, because you know you deserve it.

Tessa’s Schweddy Fat Balls w/ Nuts

Makes approximately 30 balls

Ingredients:

  • 2 C shredded coconut, no sugar added

  • 1 C melted coconut oil

  • 1/2 C melted coconut butter

  • 1/2 C sunflower seeds

  • 1/2 C pumpkind seeds

  • 1 C cashews

  • 1 C almonds

  • 2 Tbsp cacao powder

  • 2 tsp Ceylon cinnamon

  • 1 tsp cardamom

  • 6 Medjool dates (make sure you take out the pits if they have them!)

  • 2/3 C hemp milk

  • 1/2 bar dark chocolate, melted with a little bit of coconut oil

  • 1/2 C creamy peanut butter, melted with a little bit of coconut oil

  • 1/4 C pistachios, crushed

  • Freeze dried strawberries, crushed

Instructions:

  • Melt coconut butter and coconut oil and add all ingredients into a food processor. Blend until ingredients are finely chopped and thoroughly mixed together. It should look like a moist dough that is sticking together. If it is not mashing together, add more oil.

  • Roll into balls, I like to make varying sizes depending on my appetite. If you are bringing them to a party, you may not want to bring misshapen balls. Lay balls on a sheet pan lined with parchment paper.

  • While you are rolling your balls, melt dark chocolate and peanut butter in separate pots. Heat on low heat, stirring often and keep your eye on it, you don’t want it to burn!

  • Once melted, drizzle or spoon over the balls, depending on the holiday lewk you’re going for.

  • Sprinkle crushed pistachios and freeze-dried strawberries over balls.

  • Place in freezer to harden and then transfer to air-tight container or ziplock.

  • Store in freezer and let thaw for a few minutes before eating, they’ll melt in your mouth!

Ingredients:

  • 1/2 C melted coconut oil

  • 3 C shredded coconut, no sugar added

  • 1 1/2 C melted coconut butter

  • 1 1/2 C sunflower seeds

  • 1 1/2 C pumpkind seeds

  • 2 Tbsp cacao powder

  • 2 tsp Ceylon cinnamon

  • 1 tsp cardamom

  • 4 Medjool dates (make sure you take out the pits if they have them!)

  • 4 Tbsp hemp milk

  • 1/2 bar dark chocolate, melted with a little bit of coconut oil

  • Freeze dried strawberries, crushed

*If you have a severe nut allergy to tree nuts or peanuts, please read your labels carefully! Lots of products are processed in the same facilities as nuts, but you probably know this already. Just a friendly reminder to check twice! And for those making allergy friendly foods for friends with allergies, I always like to check with them if they have a brand that they know they can tolerate or if there is any specific foods, brands or products to avoid*
